Thai Avocado + Coconut Salad

With summer & BBQ season peering its friendly head over the fence, it is time for those quick & easy salad recipes. Packed with flavour & nutrient dense, colourful ingredients - Your friends & family will be begging for the recipe.

Simply chop all your ingredients, stir through your sauce & add creamy avocado chunks 5 minutes prior to eating. Easy as that!

Serves 6 side salads.
Approx. prep time; 10 minutes

Ingredients:

- 1/2 small red cabbage
- 2 large carrots
- 1 red capsicum
- 1 cup coriander
- 1/2 cup chopped peanuts
- 1/4 cup coconut
- 1⁄2 Avocado


Sauce:
- 2 tbsp soy sauce
- 1/3 cup sweet chilli
- Dash of water

Method:

Salad prep!
Finely chop red cabbage, carrots & capsicum & set aside in a large bowl.
Roughly chop coriander & mix through veggies.
Lightly toast coconut & peanuts in a pan over medium heat unit browned & aromatic. Set aside to cool & add to veggie bowl. 


5 minutes prior to eating!
Whisk sauce together in a bowl & pour over the salad.
Lastly, cube avocado & toss through the salad & enjoy!
