Needing some inspiration for tonight’s ‘Meat-free Monday’ dinner? Go no further! These Kimchi fritters are not only gluten free, dairy free & vegan, but are full of fermented goodness – The good type of stomach bacteria that makes ya gut smile!
Kimchi is fermented cabbage with onions, herbs & spices. Over time, this fermentation process yields an intense, spicy Asian flavour within the cabbage. It also preserves nutrients within the food, as well as breaking it down into a more digestible form.
The recipe for these Kimchi fritters are full of flavour, crispy on the outside and fluffy on the inside. They take less than 20 minutes to prepare and are full of health benefits ingredients. Like all good meals, they are paired perfectly with fresh & thick slices of avocado, sweet chilli sauce, or sriracha for extra spice!
Prep time; 20 minutes
Serving size; 2 people (works well when doubled too!)
1 cup grated carrot
1/2 cup kimchi (I used the Living Goodness, Sum Yum Kimchi)
3/4 cup chickpea flour
1 tsp smoked paprika
1/2 tsp turmeric
1 tsp crushed garlic
1/2 red onion
2 Tbsp Water
Salt & Pepper to taste
Sesame oil to cook
Fresh Avocado slices to serve
Pumpkin & sesame seeds
Grate carrot and chop onion.
Add all ingredients in a mixing bowl and stir with a fork until you reach a 'batter-like' consistency.
Add a splash of sesame oil to your frying pan and heat on medium temperature. Once hot, pour your Kimchi batter into your pan making your desired fritter size. Cook on each side for about 3 minutes - or until cooked through, and crispy on the outside.
Slice half an avocado into thick wedges, and serve alongside the fritters. I like to add sweet chilli sauce, sriracha & spring onion.
