Avocado & Edamame Smash.
Your classic smashed avocado on toast, with a little extra jazz. Edamame beans are a great addition to your avocado on toast, and heres why. Not only are they packed with healthy fats and protein, they provide a whole lot of added flavour and added texture to your traditional guac. With only 4 ingredients, this quick and easy spread is perfect on toast, in a nourish bowl, or even on top of your nachos.
1 large ripe Avocado
3/4 cup of edamame beans
Juice of half a lemon
Salt to taste
2 x slices of seeded loaf (We use the midnight bakers loaf)
Soak edamame beans in hot water for 2 minutes. Drain and set aside in a bowl.
Add to the bowl, avocado, lemon juice and salt then proceed to mash with a fork making sure to leave some decent chunks for added texture.
Scoop mixture on top of toasted bread and enjoy. We also love to use this spread on top of Tacos, Nachos and on top of salads.
